Celiac disease is an inflammatory autoimmune disease that damages the small intestine and interferes with absorption of nutrients from food. It is estimated that about 83% of celiac disease goes undiagnosed. Patients with celiac disease are often genetically predisposed and are unable to tolerate dietary gliadin, a gluten protein found in wheat, rye, and barley. To diagnose celiac disease, doctors will test blood for high levels of anti-tissue transglutaminase antibodies (tTGA) and/or anti-deamidated gliadin peptide antibodies (DGP). However, gastrointestinal and systemic symptoms may persist in individuals who do not have celiac disease but are sensitive to gluten or gliadin.
